Award Winning Lorne Sausage From Scotland

Lorne sausage is a much loved ingredient for a traditional Scottish breakfast either as part of a “full Scottish” or in a bread roll or sandwich. It is a new addition to our sausage selection.  A beef and pork mixture along with rusk and spices is used to make the sausage. Old Scottish cookery books show us that beef sausages have a long tradition north of the border and been always been more prominent ­traditionally. Unlike traditional sausages it has no casing so the mixture packed into a rectangular tin mold about 10 cm square. The distinctive shape gives rise to it’s alternative names square sausage, square slice or sliced sausage. Typically it is cooked (fried) in 1 cm thick slices.
