BBQ for a quick tasty meal, Blythburgh Pork steak will be perfect for this recipe. The broad bean, mint and lime salad is a great seasonal accompaniment. (This will work just as well under the grill if summer remains elusive.)

Cooking time: 15 minutes
Serves: 4
Product / cut: Free Range Pork Loin steak

4 Lean Blythburgh Free Range Pork loin steaks
2 Limes, juice and rind removed
2.5cm 1” Root ginger, peeled and grated

Place steaks into a large shallow bowl. Add the lime juice, rind and ginger. Mix together to thoroughly coat the steaks. Cover and place in the fridge to marinate for 2-3 hours.

Meanwhile heat the BBQ – make sure the coals are hot and ‘grey’ before you start cooking. Alternatively if it starts to rain pre-heat the grill!

Remove steaks from the marinade and cook for about 15 minutes until browned and cooked through, but still juicy. If the outside of the meat starts to catch, cover with foil and adjust the grid height to move away from the heat to slow down the cooking.

Serve steaks with a broad bean, mint and lime salad with an olive oil drizzle.

This is a great seasonal recipe light and fresh just right for the summer. The addition of the broad beans and mint will hit just the right note.
