Lamb kofta is a firm favourite with Middle Eastern food enthusiasts. There are many variations of these meaty treats, this recipe uses lamb mince alongside a subtle blend of spices. Lamb Koftas are super easy to make and cook well on a BBQ, pan or under the grill.  The key to perfect koftas is to get your pan very hot before cooking to make sure you get some colour on the outside. Preparation time will be about 10 minutes and a further 10 minutes for cooking. Quantities in the recipe will make six portions.

Ingredients For Lamb Kofta

For the koftas
500g lamb mince from Morley Butchers
1 small red onion, peeled and finely chopped
2 tablespoons freshly chopped parsley
2 tablespoons freshly chopped mint
Grated zest and juice of ½ lemon
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 teaspoon ground coriander

To serve
4 flatbreads
Salad leaves
Plain yogurt
Harissa Paste – optional
Greek salad

Cooking Method For Lamb Koftas

In a large bowl, season and mix all the ingredients together. If you like to experiment with more flavours, spices such as fennel, cumin,  paprika, cayenne pepper, sumac and harissa paste will all work well according to you preferences.

Using slightly damp hands, divide the mixture into 6 equal portions. Roll each portion into a sausage shape and mould around 6 short wooden/bamboo (previously soaked in water) or metal skewers. Cover and chill for 20 minutes. This will help them firm up.

Cook the koftas under a preheated moderate grill or on a prepared BBQ for 6–8 minutes on each side until cooked and any meat juices run clear. If you are using a charcoal BBQ remember to light early so that the coals are evenly white when you are ready to cook.

Serve the koftas in a flatbread with salad leaves, a dollop of plain yogurt  (give it some extra kick by mixing  in a spoonful of harissa paste) and a spoonful of Greek salad on the side.

If preferred, shape into 4 burgers and cook for 6–8 minutes on each side. Serve in a burger bun with relishes of your choice.
