A quick and simple dish for your grill. Lamb  chops with mustard and sticky citrus glaze is an great way to add extra flavour to some lovely lamb. It does not have to be chops, this will work well with steaks or cutlets too. If the weather is good this will make an excellent BBQ recipe.

The quantities here will serve four people. Allow five minutes for the  preparation and twenty for the cooking.

Ingredients For Lamb chops With Mustard And Citrus Glaze

8 Lamb chops or cutlets from Morley Butchers
Salt and freshly milled black pepper
120ml/6tbsp lime or lemon marmalade
30ml/2tbsp wholegrain or Dijon mustard
30ml/2tbsp fresh orange juice

Cooking Method For Lamb chops With Mustard And Citrus Glaze

Remove you lamb chops from the fridge and allow them enough time to come up to room temperature. Remove any wrapping and dry the meat with a cloth or kitchen towl.

Next prepare the glaze. Using a small bowl put in all the ingredients and mix together well.

Season the meat with salt and pepper then place the chops onto the grill pan or your prepared barbecue – light early so that the coals are very hot (white all over) before you start. Cook for 4-6 minutes on each side This will vary according to the thickness of the individual pieces.  Thicker chops will take longer.

During the last few minutes brush with the glaze. Remember that the marmalade has a high sugar content which can char to a not so tasty black very quickly, so keep a close eye on the last stages.

These Lamb chops with mustard and citrus glaze are great served with a mixed salad, pitta or other flatbread and some lemon wedges.
