The process begins by selecting the very best free range Blythburgh Pork. Next after hand rubbing in the curing salts the hams are dry cured for up to twenty one days. This process results in a more concentrated flavour in the meat, excellent texture and an attractive deeper colour.

Smoked Gammon For Christmas
If you prefer stronger and richer flavour we also offer a smoked range of joints. These are also produced on the premises. We use a natural draft smoking technique (latest technology gives us precise control for a perfect end result). This is a cold smoking process which over four to six hours gives an excellent deep flavour to the cured meat. Cold smoking delivers all the taste but avoids the heat that would cook the meat.
