Best Butchers in London – Award Winners

Shane Holland Executive Chairman of Slow Food UK visited Morley Butchers in Crouch End to present the 2015 London Best Butchers award. The Slow Food London Awards are a real seal of approval because the entrants and the final winners are all selected by London food shoppers.

Now in their third year these awards were created by Slow Food London to support and highlight the growing number of quality food retailers and producers within London which are the polar opposite of supermarkets .

In their awards statement Slow Food London said “The London Best Butchers award to Morley Butchers recognises excellence in their butchery, time-honed skills, as well as their impressive range of game and quality meat.”

“We are so pleased to have won this award for the second year,running, particularly as it is based on votes from our customers. A huge thank you to them for their support and enthusiasm for our products and what we do in the shop.”

Eggs For Pancake Day 2017

Pancake Day is on Tuesday 28th February. Come and see us for some really delicious free range eggs  that will make for a perfect pancake. Are you ready to get you pan flipping?

What is pancake day?

It is a religious date which is known also as Shrove Tuesday. (Shrove is a corruption of “shrive” which was a term for doing penance for the absolution of your sins). It is always the day before Ash wednesday which is the begining of lent. The date changes every year as it is 47 days before Easter which is a moveable feast; it will however be a some point on the calendar between February 3 and March 9.

Lent is the period of 40 days that leads up to Easter and Christians treat it as a time of reflection and abstinence often avoiding rich foods and luxuries. Shrove Tuesday being the day before is a designated time to use up some of the richer more indulgent ingredients in your larder in particular butter, milk, eggs – hence pancake day.  Pancake Day is celebrated globally and known by different names including Mardi Gras (literally “fat Tuesday” in French).

Pancake Recipe

110g plain flour
2 Free Range Eggs from Morley Butchers
200ml Milk mixed with 75ml water
50g Butter
Pinch of salt

Pancake cooking method

Sift the flour and salt into a large mixing bowl . Break the eggs into the middle of the flour and start whisking incorporating all the flour.

Keep whisking and slowly add in the milk and water mixture again make sure all the flour from around the edge of the bowl is included. You are ready for the next stage when the batter is smooth (similar to pouring cream)

Next melt the the butter. Add 2 table spoons into the mixture whilst whisking. Use the remaining butter to grease the pan only small smear required each time.

First make sure that you pan is very hot, then reduce to medium heat. Treat the first pancake as a tester to get your quantities right. Cooking for 30 seconds will be about right timing however lift the edge and check to see if it is cooked before you flip. The second side will cook much quicker than the first.
